After walking from the pier, you will continue at a leisurely pace toward the narrow, cobbled streets of the Old Quarter, which the Phoenicians founded in the 12th century. Being the oldest continuously occupied city in Western Europe, Cadiz exudes history, as you will soon discover in the Plaza of San Juan de Dios, a square that originated in medieval times.
As you meander the labyrinthine streets of the Old Quarter, you will pass one architectural treasure after another. Highlights may include the Neoclassical-style Cadiz Cathedral, which boasts a tile dome that appears Moorish, and Calle Ancha, a wide boulevard that is considered the heart of the city. In time, you will arrive at Taberna Flamenco La Cava, a nightclub that showcases the art of flamenco. Before taking your seat, be sure to notice the photos on the wall of some of the most acclaimed flamenco performers in the past 50 years. UNESCO honored flamenco by recognizing it on its list of Intangible Cultural Heritage of Humanity.
Andalusia, especially Cadiz, is the heartland of flamenco, an electrifying art form that fuses expressive songs, passionate dancing and emotional music. To enhance your immersion into the local culture, you will be served traditional tapas that may include Serrano ham and Manchego cheese.

Experience Barcelona's diverse architectural heritage. You'll become well acquainted with Antoni Gaudi, Barcelona's celebrity architect - his unmistakable style with its organic shapes, twisted iron sculptures and colored tiles is hard to miss. Begun in 1883, it remains unfinished to this day. Enjoy an inside visit at his towering masterpiece, la Sagrada Family (The Holy Family). Drive along the elegant Passeig de Gracia with its wrought-iron street lamps and fine array of Modernist buildings, including Gaudi's Casa Batllo, with a mosaic façade and undulating roof. Enjoy a behind-the-scenes look at a citrus farm that grows fruit much like it did in the 19th century when the farm was established. Family-owned Huerto San Eusebio grows a variety of organic fruit, including famed Valencia oranges, grapefruits, kumquats, and lemons. While touring the farm with the owner, you will also likely see rarer fruits such as a multi-fingered citron known as Buddha's hand and citrus caviar, a stout finger-shaped lime native to Australia. Most of the products are sold locally to maintain freshness and to minimize the environmental impact of transporting them over long distances. No chemicals or herbicides are used, and monoculture farming is avoided because it can deplete the soil's natural nutrients and endanger the crops. You will learn some of the more fascinating specifics during a tasting of fruits and citrus jams. In contrast to this traditional experience, you will pause for photos at the modernistic City of Arts and Sciences, Valencia's cultural hub.

Join a biologist for an enlightening walk and boat cruise through Albufera National Park to see how its former rice fields were transformed into a natural reserve. Decades of harmful agricultural practices deteriorated the water quality and threatened the wildlife within the area that is now the Tancat de la Pipa reserve. Once the rice fields were converted to freshwater wetlands, the wildlife-particularly water birds-returned in great numbers. The biologist will describe the transformative process and how the reserve's spring-fed waters are naturally filtered. A leisurely cruise on a boat will provide you with a different perspective of the wetlands and the chance to observe the flourishing biodiversity. You may spot black-winged stilts, crested coots, little-ringed plovers, and countless migratory birds such as bee-eaters. Marsh harriers are also abundant. Drive through the beautiful Andalucia region to an acclaimed cheese-producing village for an insider's look at the artisanal process and to sample the most representative cheeses. Your host will be a farmer that tends payoya goats and Grazalemeña sheep, whose milk is used to produce the cheeses. The most well-known and award-winning cheese is El Bosqueño, a smooth textured, light-colored cheese. The farmer will lead you through the fields where the goats and sheep graze and walk you through the cheese-making process step by step. You will also browse a cheese museum with displays of cheese-making hand tools and exhibits detailing the history of cheese production in the area. Afterwards, you will enjoy a sampling that may include an emborrado cheese cured in olive oil and wheat bran. Other cheeses produced here are cured with fresh spices such as rosemary and paprika. These small-plate snacks reflect the local cuisine and are typically served with a glass of sherry, especially in Jerez, which has been producing the fortified wine for more than 175 years. The exact tapas that you will prepare will depend on which ingredients are freshest and most flavorful. They might include fried fish, meatballs or something a bit more unusual such as stewed ox tail. Be sure to add favorite ingredients, as you will dine on the tapas afterwards.

After departing from the pier, you will head to Recoleta & Palermo to drive around these unique residential neighborhoods while learning about the Porteño's lifestyle from your local guide.
Next, you will visit Plaza de Mayo, arguably the country's most famous square. Its name refers to the revolution that began nearby in May 1810 and led to Argentina's independence from Spain. Some of the surrounding buildings are just as celebrated, including the salmon-colored executive mansion known as Casa Rosado. You will also see the glorious Metropolitan Cathedral, which is adorned with frescoes and elaborate artwork.
Then, it's on to the neighborhood La Boca to view El Caminito, a street that is an open-air museum of sorts full of brightly colored buildings. Some claim the tango originated here around 1870, and tango dancers are often seen performing impromptu in the streets.
Later, you will watch a professional tango performance at La Ventana Tango House in the historical San Telmo neighborhood. It's a fabulous setting to see a live show of the country's most acclaimed and passionate dance while savoring a traditional Argentine lunch. After the performance, you will return to the pier.

Discover the charms of Granada, the architecturally stunning capital of the Andalusia region, by exploring a magnificent palace, the Royal Chapel and the city’s oldest quarter.
After departing from the pier, you will settle in for scenic drive inland to Granada, a city likely named for the Spanish word for pomegranate, a fruit so abundant it is depicted on Granada's coat of arms. Or Granada may have derived from its Moorish name, as the city was the Moors' last stronghold before falling to Spain's Catholic monarchs in 1492.
Granada features a wealth of extraordinary architecture such as your first stop, the Carlos V Palace within the Alhambra complex. Construction on the palace began in the early 16th century, following a Renaissance ground plan with a circular courtyard within a square building-the only one of its kind in Spain. Amazingly, a monarch has never lived in the palace, nor did it even have a roof until 1957.
Walking a bit farther, you will soon arrive in the labyrinthine streets of the Albayzin quarter (down part of the quarter), the city's oldest section. UNESCO has deemed it a World Heritage site for its harmonious blend of Moorish and Andalusian architecture.
Nearby, you will find the glorious Royal Chapel, the final resting place of Spanish monarchs such as Queen Isabella and Kind Ferdinand. Be sure to see the chapel's mausoleum, spectacular altarpieces and ornate grilles before enjoying free time and perhaps lunch on your own in the surrounding historical area.
Afterwards, you will drive back to Malaga.

Discover the allure of the UNESCO World Heritage Site city of Santiago de Compostela on this full day tour.
Traveling by coach, it's a comfortable ride of just over 1 hour to this charming town that offers visitors a magical glimpse into the past. Upon arrival, you will disembark your coach for a ten-minute walk to the center of the city where you will find the famous cathedral at Plaza del Obradoiro. Here, you can appreciate the great Romanesque architecture of the Cathedral and surrounding buildings. Positioned to one side of the Cathedral is the well-known Hostal de Los Reyes Catolicos, a former hospital which is now a luxurious hotel. Directly opposite the Cathedral is the Palacio de Rajoy. Built in the 18th century, the Palace today serves as the Town Hall and also the parliament building for the regional government.
Making your way to the Hostal de Los Reyes Católicos, you will be treated to a leisurely lunch of local favorites accompanied by a glass of rosé wine. Following lunch, your guide will provide you with plenty of information from the exterior of the Cathedral. Afterwards, those who wish may enter the Cathedral independently during the free time you will be provided. For those who choose to enter, you will find a unique gamut of architectural styles. Romanesque, Baroque and Ogival Gothic styles are all combined with the most elegant Plateresque throughout the vast confines of the cathedral. There is also a silver urn containing the ashes of St. James, the Apostle of Santiago. The urn is kept in a small crypt situated immediately under the ornate high altar dominated by the carved image of the Patron Saint of Spain.
Your guided tour resumes with a walk through the Old Town of Santiago de Compostela. Before rejoining your coach for the transfer back to the ship, free time will be provided to explore on your own or do some souvenir shopping.
