Departing your ship, drive along Avenida do Mar to reach the terminal. There you'll board your cable car for a ride over the city and harbor on the way to the Village of Monte, located in the outskirts of Funchal. At Monte you'll have the opportunity to take a trip back to the past when you join the toboggan ride to Livramento. The ride downhill in a wicker sledge is an exciting one, providing you with a taste of the Madeira of past decades, when this was the established form of transport from Monte to Funchal. After a short drive along a winding road you'll reach Eira do Serrado, offering spectacular views of the interior of the island.

Take a short walk up to the viewpoint on Pico do Serrado at an altitude of approximately 3,592 feet (1,095 meters), for an amazing view down onto the village of Curral das Freiras (Nuns Valley), a small village located in the heart of the island, nestled between almost perpendicular mountains. In 1566, the nuns from the Santa Clara convent fled from pirates attacking Funchal and found seclusion here where they also brought the convent's treasure. Your last stop before returning to your ship will be at one of the famous wine lodges in Funchal, where you'll sample and may purchase the world famous Madeira wine.

Explore a series of caverns decorated with pre-Columbian paintings and a hilltop village designed to replicate a 16th-century Mediterranean village. The caves are truly wondrous and not just because of its hundreds of beautifully preserved native Taino Indian wall paintings, which are known as pictographs. While walking the cave's winding paths, you will also see abundant geological wonders, which include eerily shaped, dramatically lighted stalactites and stalagmites. Be sure to look into the Water Mirror, a subterranean lake that reflects the unusual formations on the ceiling. Unlike the ancient cave system, the village Altos de Chavon only looks old. Local artisans built it in the 1980s as a cultural and artistic center, and its setting above the Chavon River is spectacular. Architectural highlights include a Grecian-style outdoor amphitheater and the stone St. Stanislaus Church. The village's Archaeological Regional Museum contains thousands of real Pre-Columbian artifacts that lend insight into the indigenous people.

Visit an ancient farm and mill that produce olive oil in a traditional way that protects the environment and improves the land's biodiversity. While walking through the olive groves with the owners of Molino La Paca, you will gain an understanding of the traditional agricultural practices in Andalusia. It provides benefits to the environment, such as less soil erosion, improved fire protection and greater biodiversity. Learn how the processes residues are used to produce energy in a nearby factory. While enjoying olives and a glass of local wine, you will taste the difference in the extra-virgin olive oil that the farm produces. For a glimpse into other aspects of Andalusian life, you will explore Mijas, a town whose architecture bears Roman, Moorish, and Spanish influences and a picture-perfect village perched high on a mountainside.

The walking portion of the tour will begin at leafy Parque Vargas, a popular gathering place that overlooks the sea. Be sure to notice Uvita Island just offshore, as it is renowned as the spot where Christopher Columbus landed in 1502 on his fourth and final voyage to the New World. He is credited with naming Costa Rica, which is Spanish for "Rich Coast." You will also pause to take in the sights at Playa Bonita, a beautiful stretch of sand nearby. A dance performance to live calypso music follows at the House of Culture, after which you will learn to prepare a few signature local dishes. Chances are, they will include a Costa Rican version of rice and beans, a beef-stuffed turnover and a sweet plantain tart. Later, you will snack on your tasty concoctions.

Savor a variety of traditional Madeira beverages and dishes in the mountain village Serra D'Agua and in a private home in the suburbs of Funchal. As an introduction to the island's gastronomy, you will be served a glass of poncho in the village. This traditional drink of Madeira may have originated in India with the British then introducing it to the island. Although poncho is sometimes made with the juice of passion fruit or tangerines, it typically contains lemon juice, honey and alcohol distilled from cane sugar. Continuing on to a private home in the Funchal suburb of Santo António, you will delve into the local cuisine with a tasting of various delicacies. Chances are, the menu will include Carne Vinho e Alhos, a traditional dish of pork marinated in wine and garlic. Side dishes may include favorites such as artisanal bread, sweet potatoes, fried corn and local cheeses.

Discover the charms of Granada, the architecturally stunning capital of the Andalusia region, by exploring a magnificent palace, the Royal Chapel and the city’s oldest quarter.

After departing from the pier, you will settle in for scenic drive inland to Granada, a city likely named for the Spanish word for pomegranate, a fruit so abundant it is depicted on Granada's coat of arms. Or Granada may have derived from its Moorish name, as the city was the Moors' last stronghold before falling to Spain's Catholic monarchs in 1492.

Granada features a wealth of extraordinary architecture such as your first stop, the Carlos V Palace within the Alhambra complex. Construction on the palace began in the early 16th century, following a Renaissance ground plan with a circular courtyard within a square building-the only one of its kind in Spain. Amazingly, a monarch has never lived in the palace, nor did it even have a roof until 1957.

Walking a bit farther, you will soon arrive in the labyrinthine streets of the Albayzin quarter (down part of the quarter), the city's oldest section. UNESCO has deemed it a World Heritage site for its harmonious blend of Moorish and Andalusian architecture.

Nearby, you will find the glorious Royal Chapel, the final resting place of Spanish monarchs such as Queen Isabella and Kind Ferdinand. Be sure to see the chapel's mausoleum, spectacular altarpieces and ornate grilles before enjoying free time and perhaps lunch on your own in the surrounding historical area.

Afterwards, you will drive back to Malaga.

Discover Murcia, the capital of the province and Cartagena - a crossroad of cultures with a fascinating history dating back 3,000 years. An approximate 1-hour journey through the foothills of the Sierra Carrascoy takes you to Murcia. Settled by the Moors in the 9th century and conquered by the Christians in the 13th century, this bustling city offers an array of architectural delights. Stop at the Monastery of the Virgin of Fuensanta and enjoy a panoramic view of the orchards, one of the most productive in the Mediterranean.

Stop at Cathedral Square, where you'll see the beautiful Baroque style facade of the cathedral, next to the Episcopal Palace. Visit the Royal Casino of Murcia dating back from 1847, it is one of the most historic buildings. Although this is still an active private club, the ground floor is open to the public. After a period of decline in the second half of the 20th century, the building was completely refurbished and many of the rooms were restored to their original splendor. You'll also pass through the Squares of Santo Domingo and Romeo and enjoy free time for lunch on your own before returning to Cartagena for an orientation tour of the city.

In Cartagena, you'll visit the Castle of Conception outside visit, built over the remains of the Moorish Alcazar. From this vantage point, enjoy superb views of the city and harbor. Due to the natural protection of the mountains surrounding it, it was chosen as one of the three main naval bases in Spain during the 18th century. The remarkable remains of the Roman Theatre were only discovered back in the late 1980's, it is believed to have accommodated up to 6,000 spectators.

Tear through the jungle canopy high above the forest floor on a series of ziplines, stopping every so often on towering platforms that will offer extraordinary views. The venue for your adventure will be Hacienda Campo Rico, a former sugar plantation that blankets thousands of acres of subtropical forest. Following an orientation that will allow you to maximize the experience, you will walk to the hilltop starting point. The view from this elevated perch will be magnificent, but only a hint of what's to come. After being harnessed in and stepping off the platform into thin air, you will race through the tree canopy on a series of ziplines, each one a thrill in its own way. It will be an absolutely exhilarating experience as you fly through the air as high as 200 feet above the ground. You will pass over glassy lagoons, fields of plantain and pastureland before the last zipline ends at the Mojito Bar.

Spanish horses are pure breed and gifted with an ability to learn the intricate steps of Spanish dressage. Schooling of the Andalusian horses requires much time and patience on the part of their professional trainers. They will show you how the horses are trained. You'll also enjoy fantastic local produce here served with a selection of typical Spanish tapas with wine, offering the best ingredients of the region in a beautiful garden setting. Just before returning to the pier, your guide will give you an orientation tour through Cartagena, a panoramic drive from the bus. Learn about the intense history of the city since Carthaginian and Roman times, the military history of the city and the prosperous Modernist period in Cartagena.

Your panoramic drive through some of the most important avenues of the city such as Paseo Alfonso XIII, Plaza de España and Calle Real, will give you the opportunity of admiring the University area, the beautiful building of the Regional Assembly, the Military Arsenal, as well as some notable Modernist buildings such as the Maestre House.

Just before entering back to the pier, there is also a drop-off optional stop: Next to the Main Street (Historical, shopping and restaurant area) you will have the opportunity to finish your tour and descend from the bus if you decide to stay in the city center, at your own leisure, to stroll or have a coffee (at own expenses) before making your own way back to the ship, if not, just remain seated and the bus will drive back inside of the pier to finish the tour.

Join the effort to keep Saint-Martin Nature Reserve ecologically sound and reward yourself by relaxing on an idyllic stretch of beach nearby. During this hands-on experience at the reserve, you can participate in a variety of activities that may include regulating invasive species, planting mangroves and counting birds. As you will see firsthand, the reserve is well worth keeping in its natural state. Although protected, the abundant marine and terrestrial species still face environmental challenges that you will help neutralize. It is a never-ending process to which Saint-Martin is wholly committed. Following your volunteer efforts, you will enjoy the setting of a pristine beach, Orient Beach, an area known as the Saint-Tropez of the Caribbean. Feel free to spend the time there however you please, which could be doing nothing more ambitious than lying in the sun without a care in the world. The waters are typically bright turquoise and calm, so be sure to take a refreshing swim in the sea.
