The options include ones made with corn mushrooms, pork rinds, shrimp and even prickly pear cactus. The go-with salsas will be just as varied. They typically range from a fresh tomato-based pico de gallo to a fiery tatemada, a salsa made with charred tomatoes and hot chili peppers.
